White Tuna - Bonito del Norte - is individually line-caught during the summer fishing season, either with live bait or baitcasting. This age-old technique of selective fishing respects the environment and the seabed. We process our White Tuna in a totally traditional way in search of an exceptional result in terms of delicate texture and exquisite flavor on the palate.  The flesh is a pale colour and has a delicate flavour that is at its best when eaten simply, in a salad for example.
